1 bottom round roast

2/3 cup Cabernet Sauvignon wine
2 cups 1-inch Yukon Gold potato chunks
2 cups 1-inch carrot chunks
1 1/2 onions , cut into 1-inch pieces

Instructions

1.Preheat the oven to 350°F.
2.Season the roast with kosher salt, black pepper, and granulated garlic to taste.

5.Remove the roast from the Dutch oven and set aside on a plate.
6.Add the diced onion, celery, garlic, oregano, and basil to the Dutch oven. Cook until the onion is soft.
7.Add the dry cooking sherry and cook until reduced by half.
8.Add the canned tomatoes and Cabernet Sauvignon wine. Stir to combine.
9.Return the roast to the Dutch oven, spooning the tomato mixture over the top.
10.Cover the Dutch oven with a lid and place in the preheated oven.
11.Cook for two hours, then add the potato, carrot, and onion chunks.
12.Cover and cook for an additional hour or until the vegetables are tender and the roast is falling apart.
13.Serve hot with mashed potatoes or crusty bread.
