570 g tart baking apples ( about 2 large ones )
75 g caster sugar , plus ( superfine )
3 tablespoons caster sugar
125 g digestive biscuits
50 g unsalted butter , melted
400 g cream cheese
3 large eggs
284 ml sour cream ( divided )
1 teaspoon vanilla extract
1 tablespoon cornflour ( cornstarch )
300 g blackberries ( fresh or frozen )
2 tablespoons caster sugar ( superfine )
This Bramley Apple Cheesecake with Stewed Blackberries is an impressive dessert that can be served for any occasion or celebration. Instructions

1.Preheat the oven to 180°C ( 356°F ) gas mark 4.
2.Peel, core , and slice the apples and place them in a saucepan with the 75g sugar and 3tbsp of water.
3.Cover and simmer gently until the apples are soft, stirring occasionally, then leave to cool.
4.Blitz the digestive biscuits in a food processor until they are finely crushed, and add the melted butter. Mix until combined and press into the base of a 20cm (8inch) springform tin.
5.Beat the cream cheese and 75g sugar together in a bowl until smooth, then add the eggs, one at a time, beating well after each addition.
6.Stir in 142ml of the sour cream and the vanilla extract.
7.Combine the cornflour with the remaining sour cream and stir into the cheese mixture.
8.Spoon half the cheese mixture onto the biscuit base and smooth the surface.
9.Scatter the cooled spiced apple over the cheese mixture.
10.Spoon the remaining cheese mixture over the apples and smooth the surface.
11.Bake in the preheated oven for 35-40 minutes or until set.
12.Meanwhile, cook the blackberries and remaining 2 tbsp sugar with a few tablespoons of water in a saucepan, gently simmer until the blackberries have broken down
13.Set aside to cool.
14.Chill the cheesecake in the fridge for at least an hour, preferably until cooled completely.
15.Serve with the stewed blackberries.
