2 kg wild boar , back with bones
1 garlic clove

1 teaspoon ground caraway
1 carrot
1 parsley root
125 g celery root , piece of
2 onions
2 tablespoons butter
1/2 teaspoon allspice , whole seed
8 juniper berries
1/4 liter full-bodied red wine
1/2 liter veal stock or 1/2 liter game stock , dark
1 tablespoon flour
4 tablespoons dry sherry
200 g sour cream
1 tablespoon parsley

Instructions

1.Preheat oven to 160°C.
2.Season the wild boar with salt, pepper and caraway.
3.Cut carrots, parsley and celery roots, and onions into small cubes.
4.Melt butter and sauté the vegetables along with allspice and juniper berries in a large oven-proof pot.
5.Remove the vegetables from the pot. Sear the wild boar on both sides in the same pot until golden brown.
6.Deglaze the pot with the red wine and bring to a boil. Add the vegetables and broth.
7.Cover the pot with a lid and roast in the oven for 3-4 hours.
8.After roasting, remove the boar from the pot and keep it warm. Strain and remove the vegetables from the liquid.
9.Mix flour and sherry together in a small bowl until smooth and stir into the liquid.
10.Finally, stir in the sour cream and sprinkle with parsley before serving.
