Ingredients

12 dried shiitake mushrooms ( soaked in hot water for 30 min )
1 star anise
1 tablespoon ginger
100 g bean curd
8 prawns , peeled and deveined
1/4 cup chicken stock
1 tablespoon dark soy sauce
1 tablespoon light soy sauce
1 tablespoon sugar
1 tablespoon Chinese wine
1 pinch salt
1 dash white pepper
1 tablespoon cornflour ( mix with 2 tbsp water )
1/2 teaspoon sesame oil

Instructions

1.Drain the soaked shiitake mushrooms, cut off the stems and set them aside. Heat a wok on high heat and add the vegetable oil.
2.Add the ginger and star anise, stir-fry until fragrant. Add the mushrooms and stir-fry for 1 minute.
3.Add chicken stock, dark soy sauce, light soy sauce, sugar, Chinese wine, salt, and white pepper. Stir and let it cook for 3 minutes.
4.Add the prawns and bean curd and cover the wok with a lid. Let it simmer over medium heat for 5 minutes.
5.Remove the lid and stir in the cornflour mixture. Add sesame oil and serve hot.
