Ingredients

8 tablespoons butter
1/2 cup onion , finely chopped
pigeon chicken giblets , finely chop
2 1/2 cups fireek bulgur wheat ( coarsely crushed green wheat grains )
2 teaspoons mint , fresh , finely cut or 1 teaspoon dried mint , crumbled
1 1/2 teaspoons salt
black pepper , freshly ground
4 woodcock or ( 1 lb ) grouse
1 1/2 cups water , cold
2 1/2 cups chicken stock , fresh or can
parsley sprig

Instructions

1.Melt butter in a large ovenproof casserole dish over medium heat.
2.Add onion and giblets and cook until browned.

5.Preheat oven to 325°F (160°C).
6.Season the pigeons with salt and pepper and place on top of the stuffing in the casserole.
7.Add 1 1/2 cups cold water and 2 1/2 cups chicken stock.
8.Cover and cook in the preheated oven for 1 hour 30 minutes.
9.Remove the cover and cook for an additional 15-20 minutes or until the pigeon is nicely browned.
10.Serve hot garnished with a sprig of parsley.
