Ingredients

2 kg oxtails
750 ml white wine ( cabarnet or similar )
4 fresh thyme sprigs
8 small sweet potatoes , peeled and cubed
25 white pearl onions or 25 shallots
olive oil
salt
pepper

Instructions

1.Preheat oven to 325°F (160°C)
2.Season the oxtail with salt and pepper, and heat the olive oil in a Dutch oven on high heat
3.Add oxtail to oil and sear on all sides until brown
4.Remove the meat from the pan and set aside
5.Add onions to the same pan and cook until translucent
6.Add wine and cook until reduced by half
7.Return the oxtail to the pan, add thyme, and bring the mixture to a simmer
8.Cover the pot with a tight-fitting lid and bake in the oven for 3-4 hours, until meat is tender
9.Add sweet potatoes to pot and bake for an additional 45-60 minutes, or until sweet potatoes are tender
