Ingredients

1 veal shoulder , boned and tied ( have the butcher do this for you , 3 1/2 lbs . )
2 teaspoons paprika ( preferably Hungarian )
salt & freshly ground black pepper
4 -6 tablespoons vegetable oil
1 large onion , chopped
1 carrot , peeled and chopped
1 1/2 tablespoons paprika ( preferably Hungarian )
2 tablespoons flour
1/2 cup dry white wine
1/2 cup dry sherry
1 cup chicken stock
12 whole black peppercorns
8 fresh parsley sprigs
1 bay leaf
1 teaspoon dried thyme , crumbled
1/2 cup sour cream

Instructions

6.Add wine, sherry, and chicken stock and bring to a simmer
7.Add peppercorns, parsley, bay leaf, and thyme
8.Return veal to the pan, cover, and simmer for 2 to 3 hours
9.Remove the veal from the pan and set aside
10.Blend the remaining sauce until smooth and creamy
11.Add sour cream and heat for a few minutes
12.Serve sliced veal with the paprikas sauce
