440 ml Guinness stout
405 g diced tomatoes with basil and oregano
1 1/2 cups beef stock
1 1/2 cups water
1 cup pearl barley
2 tablespoons parsley , chopped

Instructions

1.Preheat the oven to 160°C.
2.In a plastic bag, combine flour, salt, and pepper. Put a lamb shank in the bag, shake, and then remove. Repeat with remaining lamb shanks. Set aside remaining flour mixture.
3.In a frying pan, heat oil over medium heat. Add lamb shanks and cook until browned on all sides.
4.In a large casserole dish, layer mixed vegetables, then top with lamb shanks.
5.In a mixing bowl, combine Guinness, diced tomatoes, beef stock, and water. Add reserved flour mixture and mix well. Pour over the lamb shanks.
6.Cover with a lid and bake in the oven for 2 hours.
7.Stir in the pearl barley. Bake for an additional hour or until the lamb and barley are tender.
8.Sprinkle with parsley before serving.
