Ingredients

2 lamb shanks
2 tablespoons olive oil
400 g chopped tomatoes ( tinned )
200 ml red wine
750 ml lamb stock ( to just cover )
2 sprigs thyme
140 g sliced mixed mushrooms
20 g butter
1 garlic clove , crushed
This recipe is a classic Italian dish that's perfect for any special occasion or hearty meal. The lamb shanks are slowly cooked in a rich tomato and red wine sauce until they're melt-in-your-mouth tender. The addition of mixed mushrooms adds an earthy and savory element to the dish. Instructions

1.Preheat the oven to 160°C (fan)/180°C/gas 4. Season the lamb shanks.
2.Heat the olive oil in a casserole dish over a high heat and brown the shanks on all sides.
3.Remove the shanks and set them aside. Add the chopped tomatoes, red wine, lamb stock and thyme to the dish. Let the mixture come to a simmer.
4.Return the shanks to the dish and cover with a lid. Bake in the oven for around 2 hours.
5.Meanwhile, sauté the mixed mushrooms in butter and garlic until soft.
6.Remove the thyme sprigs from the casserole and add the mushrooms to the dish. Place the lid back on and cook for another 15 minutes.
7.Serve the lamb shanks with the mushroom and tomato sauce.
