Ingredients

5 lbs boneless beef chuck roast ( shoulder and blade will work too )
1 1/2 teaspoons salt
1 teaspoon fresh ground black pepper
2 tablespoons olive oil
2 celery ribs , chopped
2 carrots , chopped
1 medium onion , chopped
6 large garlic cloves , minced ( about 2 Tbsp )
2 cups red wine or 2 cups beef broth
1 can crushed tomatoes
2 teaspoons thyme
1 bay leaf

Instructions

1.Preheat the oven to 325F (160C).
2.Trim the fat from the beef and cut into 2-inch pieces. Season the beef with salt and black pepper.
3.Heat the oil in an oven-safe Dutch oven or large heavy-bottomed pot over high heat.
4.Brown the beef in batches, removing it with a slotted spoon to a plate when done.
5.Add the celery, carrots, onion, and garlic. Sauté until the vegetables are soft, about 5 minutes.
6.Add the red wine or beef broth, crushed tomatoes, thyme, and bay leaf. Bring to a boil, scraping the bottom of the pot to remove any browned bits.
7.Return the beef to the pot, submerging it in the liquid.
8.Cover the pot with a tight-fitting lid and transfer it to the oven. Bake the stew for 2 1/2 to 3 hours or until the beef is tender.
9.Discard the bay leaf and season the stew with salt and black pepper as needed. Serve hot.
