Instructions

1.Preheat the oven to 375°F (190°C) and line a baking dish with parchment paper.
2.Fill a large bowl with ice water and lightly salt it. Submerge the halved endives in the salted ice water and let them sit for 30 minutes, then drain and pat them dry.
3.Heat a large skillet over medium-high heat and melt the butter. Add the endives, cut side down, and sprinkle with salt and pepper. Cook for 5-6 minutes or until the endives are lightly browned.
4.Flip the endives over and turn off the heat. Drizzle the lemon juice over them and add the chicken stock. Cover the skillet and transfer it to the oven. Bake for 15-20 minutes or until the endives are tender.
5.In a small bowl, whisk together the eggs and flour with a fork. Slowly stream in the lemon juice while stirring continuously. Pour the egg mixture into the skillet with the endives and return it to the oven. Bake for a further 5-7 minutes or until the sauce has thickened and is lightly golden. Serve immediately.
