Ingredients

1 large chicken leg , cut into 5 pieces with bones
1 teaspoon dark soya sauce
1 teaspoon sugar
1 teaspoon cornflour
1 large sweet onion , skin removed and cut into wedges
3 fresh shiitake mushrooms , cut into halves ( can also use black chinese mushrooms , canned or dried )
2 tablespoons sliced ginger
2 cloves garlic , skin removed and crushed
1 piece cinnamon
2 cloves
1 star anise
5 peppercorns
1/4 teaspoon salt
1/2 teaspoon dark soya sauce
300 ml water or 300 ml chicken stock
1 tablespoon cooking oil
1 stalk coriander leaves , chopped

Instructions

1.In a small bowl, mix dark soya sauce, sugar, and cornflour.
2.Heat a wok or large frying pan over high heat and add the cooking oil, ginger, garlic, cinnamon, cloves, star anise, and peppercorns. Fry for a minute until fragrant.
3.Add the onion and fry until it softens and turns translucent.
4.Add the chicken and fry until it turns golden brown.
5.Add the mushrooms, soya sauce mixture, salt, and water or chicken stock. Mix everything well.
6.Bring the mixture to a boil, then reduce the heat to low and cover with a lid. Simmer for 15-20 minutes or until the chicken is cooked through and tender.
7.Garnish with chopped coriander leaves and serve hot with steamed rice.
