Ingredients

1 head celery
1 medium onion
1 teaspoon fresh parsley leaves , chopped
2 slices bacon
10 ounces chicken stock
salt and black pepper
1 ounce butter

Instructions

1.Preheat the oven to 375°F (190°C)
2.Trim the ends of the celery and wash well. Peel the onion and chop finely
3.In a pan cook the bacon until crispy, then remove from the pan, crumble and set aside. Reserve the bacon fat.
4.Add the butter and onion to the pan and cook for 5 minutes until softened.
5.Place the celery in the pan, season with salt and pepper and cook for a further 5 minutes.
6.Add the chicken stock, parsley and bacon and bring to boil.
7.Cover with a lid and transfer to the oven and bake for 40-45 minutes until the celery is tender.
8.Serve immediately as a side dish with beef or potatoes.
