Ingredients

2 tablespoons olive oil
3 lbs bison roast
1 onion , coarsely chopped
4 large carrots , peeled and coarsely chopped
2 stalks celery , diced
5 -6 medium yukon gold potatoes , skin on and quartered
1 bay leaf
2 tablespoons tomato paste
1 cup dry red wine
1 cup beef stock
2 tablespoons all-purpose flour
salt , to taste
ground pepper , to taste

Instructions

1.Preheat the oven to 325°F (160°C).
2.Heat a dutch oven over medium heat. Add the olive oil.
3.Sear the bison (or beef) roast on all sides until brown.
4.Remove the roast from the pan and add onions, carrots, and celery. Cook them until they soften.
5.Stir in the tomato paste, beef stock, and red wine. Mix flour and water together and pour into the pan. Stir to combine.
6.Put the roast back in the pan and add bay leaf. Add salt and pepper to taste.
7.Cover the dutch oven with a lid, then bake in the oven for 3 hours.
8.Add the quartered potatoes to the pan, and continue baking for another hour, or until the potatoes and meat are cooked.
9.Once cooked, remove the roast from the pan and let it rest for 10 minutes. Slice the meat against the grain and serve hot with the vegetables and sauce.
