Ingredients

1 teaspoon ground cumin
1 teaspoon ground coriander
2 teaspoons new mexico chile powder
1/8 teaspoon ground cinnamon ( optional )
1 teaspoon salt
1 teaspoon fresh ground black pepper
1 1/2 lbs boneless chuck steaks , 1-inch think ( can substitute rump steak , sirloin tip steak , top round steak , London broil or well-marbled bottom r )
2 tablespoons olive oil
2 cups thinly sliced onions
2 tablespoons minced garlic
1 cup tequila
1 can diced tomatoes , drained
3 chipotle chiles in adobo , chopped
1/2 cup fresh orange juice
1/4 cup fresh lime juice , plus more to taste ( see note below )
1 cup homemade beef stock or 1 cup canned low sodium chicken broth
2 bay leaves
salt & freshly ground black pepper
orange slice
chopped fresh cilantro
finely chopped red onion
pico de gallo

Instructions

1.Preheat your oven to 325°F (165°C).
2.Mix together the ground cumin, ground coriander, new mexico chile powder, ground cinnamon, salt, and fresh ground black pepper in a small bowl.
3.Rub the mixture all over the beef steaks and set aside.
4.In a large Dutch oven or ovenproof pot with a tight-fitting lid, heat the olive oil over medium-high heat.
5.Add the thinly sliced onions and minced garlic and cook until softened and lightly browned.
6.Add the tequila, diced tomatoes, chopped chipotle chiles in adobo, fresh orange juice, fresh lime juice, homemade beef stock or canned low-sodium chicken broth, bay leaves, and salt and freshly ground black pepper to taste.
7.Bring the mixture to a boil and then reduce the heat to low.
8.Add the beef steaks to the pot, nestling them in the liquid.
9.Cover the pot and transfer it to the oven.
10.Cook for approximately 3 hours, or until the beef is tender and falling apart.
11.Remove the pot from the oven and let the beef cool slightly.
12.Shred the beef with two forks and mix it back into the cooking liquid.
13.Serve the braised beef with orange slices, chopped fresh cilantro, finely chopped red onion, and pico de gallo, if desired.
