1 tablespoon fresh thyme
1 can tomato paste
2 cups red wine , Edmeades Zinfandel preferred
2 tablespoons peppercorns
1 1/2 quarts beef stock

Instructions

1.Preheat the oven to 325°F (163°C).
2.Season the beef short ribs with salt and pepper.
3.In a large Dutch oven, over medium heat, sear the short ribs until well browned on all sides.
4.Remove the beef from the pot and set aside.
5.Add the carrots, celery, onions, garlic, and thyme to the pot and sauté for 5 minutes or until the vegetables are lightly browned.
6.Add the tomato paste and cook for 2-3 minutes, stirring constantly.
7.Add the red wine, scraping the bottom of the pot to release any browned bits.
8.Add the peppercorns and stock and bring to a simmer.
9.Return the beef to the pot and bring to a boil.
10.Cover the pot and place it in the oven for 3-4 hours, or until the beef is tender.
11.Remove the beef from the pot and strain the liquid through a fine mesh sieve into a pot.
12.Reduce the liquid to a sauce consistency, taste and adjust the seasoning, and serve the beef with the sauce.
