Ingredients

250 g diced lamb or 250 g chicken thighs
2 large ripe tomatoes , cored and cut in 8 pieces each
300 g potatoes , quartered lengthwise
250 g carrots , peeled and cut in long chunks
250 g zucchini , cut into long chunks
1 large onion , peeled and cut into long , chunky slices ( about 300g )
1/4 cup fresh parsley , wrapped in cheesecloth
2 cups couscous ( about 330g )
4 tablespoons olive oil
1 tablespoon hot sauce ( optional )
salt & freshly ground black pepper
Brahim's Desert Couscous is a hearty, flavorful meal that's a staple in North African cuisine. Instructions

1.In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Add diced lamb (or chicken) and cook until browned.
2.Add chopped onions and stir for 2-3 minutes until onions are translucent.
3.Add chopped carrots, potatoes, and chopped tomatoes and cook for another 3-5 minutes.
4.Pour in 3-4 cups of water and add cheesecloth-wrapped fresh parsley.
5.Season with salt and freshly ground black pepper, reduce heat, and let it simmer for 45 minutes.
6.Add cut zucchini and continue to cook for another 15-25 minutes until vegetables and meat are tender.
7.Season couscous with a tablespoon of olive oil, salt and pepper to taste, and hot sauce (optional). Pour 2 cups of boiling water over couscous and let it sit under the lid for 5-7 minutes. Fluff with a fork before serving.
8.Serve the couscous hot with the vegetables and meat on top.
