Ingredients

1 lb boneless beef round steak , 4 thin slices
3 garlic cloves
2 teaspoons freshly grated pecorino romano cheese
2 tablespoons fresh flat leaf parsley , chopped
salt
pepper , freshly ground
4 slices prosciutto ( thin slices )
2 tablespoons olive oil
1 cup dry red wine
4 cans tomato puree or ( 14 ounce ) cans canned Italian tomatoes , passed through a food mill
4 fresh basil leaves , torn into small pieces
1 lb ziti pasta or 1 lb penne pasta , cooked

Instructions

1.Preheat the oven to 350°F.
2.To make the stuffing, combine the garlic, pecorino romano cheese, parsley, and a pinch of salt and pepper in a small bowl. Mix together until well combined.
3.Lay the beef slices out on a work surface and pound them thin with a meat mallet. Season both sides of each slice with salt and pepper.
4.Place a slice of prosciutto on top of each beef slice, trimming the prosciutto as needed to fit the beef. Divide the stuffing mixture evenly among the beef slices, spreading it out over the prosciutto.
5.Rolling up each beef slice tightly, secure each roll with toothpicks.
6.Heat the olive oil in a large skillet over medium-high heat. Add the beef rolls and cook until browned on all sides, about 5 minutes total.
7.Pour in the red wine and let it cook down for 1-2 minutes.
8.Add the tomato puree or canned tomatoes, season with salt and pepper, and bring to a simmer.
9.Transfer the skillet to the oven and bake until the beef rolls are cooked through and the sauce has thickened, about 1 hour.
10.Remove the toothpicks and sprinkle fresh basil leaves over the top.
11.Serve with pasta.
