Ingredients

1 lb boneless beef top round , trimmed of fat and cut into 4 thin slices
salt and pepper ( to taste )
4 slices prosciutto ( sliced thin )
4 slices provolone cheese
2 tablespoons pine nuts
2 tablespoons currants ( can substitute raisins )
2 garlic cloves , peeled and chopped
1/4 cup olive oil
1 medium yellow onion , peeled and chopped
1 cup dry red wine
4 large tomatoes , peeled , seeded and chopped
1 tablespoon fresh flat-leaf parsley , chopped
3 -4 fresh basil leaves , torn into small pieces

Instructions

1.Preheat oven to 350°F (180°C).

5.Roll up the meat and secure it with a toothpick.

8.Add the red wine and let it evaporate, stirring occasionally. Add the chopped tomatoes, parsley and basil leaves, and cook for a few minutes until thickened into a sauce.
9.Return the beef rolls to the pan and coat them with the sauce.
10.Cover the skillet and bake in the preheated oven for 45 minutes.
