Ingredients

1/2 cup breadcrumbs
2 garlic cloves
2/3 cup grated fresh parmesan cheese
2/3 cup grated provolone cheese
2 tablespoons fresh parsley
2 tablespoons marjoram
1 tablespoon thyme
1 tablespoon basil
1 teaspoon crushed red pepper flakes
4 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
1 1/2 lbs flank steaks
1 cup dry white wine
3 1/4 cups tomato sauce ( see Simple Tomato Sauce , or use canned tomoto sauce )

Instructions

1.In a medium bowl, mix together the breadcrumbs, garlic, Parmesan cheese, provolone cheese, parsley, marjoram, thyme, basil, crushed red pepper flakes, 2 tablespoons of olive oil, salt and pepper.
2.Lay the flank steak out flat on a cutting board and season with salt and pepper. Spread the breadcrumb mixture evenly over the steak.
3.Starting at one end of the steak, roll it up tightly and tie it securely with kitchen twine.
4.Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the rolled-up steak and cook until browned on all sides, about 8 minutes.
5.Add the white wine and simmer until reduced by half, about 2 minutes.
6.Add the tomato sauce and simmer over medium-low heat for 1 hour, stirring occasionally. Remove the twine and slice the steak into 1-inch-thick rounds to serve.
