Ingredients

1 tablespoon olive oil
12 cloves garlic , pressed and divided
4 zucchini , thinly sliced
salt and pepper to taste
1 1/4 pounds skinless , boneless chicken breast halves - cut into bite-size pieces
1 pound carrots , peeled and thinly sliced
1 package uncooked farfalle ( bow tie ) pasta
1/4 cup butter
1 can chicken broth
3/4 cup water
1 ( .18 ounce ) packet chicken bouillon granules
1/2 cup grated Parmesan cheese

Instructions

1.In a large pot, cook pasta according to package directions. Drain and set aside.
2.While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add half of the pressed garlic and cook until fragrant, about 30 seconds.
3.Add zucchini to the skillet and cook until tender, about 5 minutes. Season with salt and pepper to taste. Remove from skillet and set aside.
4.In the same skillet, add chicken and cook until browned on all sides and cooked through, about 7-8 minutes. Remove from skillet and set aside.
5.In the same skillet, melt butter over medium heat. Add remaining garlic and cook until fragrant, about 30 seconds. Add chicken broth, water, and chicken bouillon granules. Bring to a low boil.
6.Add carrots to the skillet and reduce heat to a simmer. Cook until tender, about 10-15 minutes.
7.Add cooked pasta to the skillet and toss with the sauce. Add cooked chicken and zucchini and toss again.
8.Sprinkle grated Parmesan cheese over the top and serve hot.
