Ingredients

8 egg yolks
4 tablespoons caster sugar
1 pinch salt
800 ml milk ( low-fat is fine )
vanilla essence , to taste
6 oranges , peeled and thinly sliced
1/2 tablespoon orange zest
225 g granulated sugar
2 tablespoons hot water
Bourtaka Muhallabieh is a traditional Middle Eastern dessert that is popular in Lebanon and Syria. It is a combination of custard and orange and is topped with caramel. Instructions

1.Preheat the oven to 150°C (300°F/Gas 2).
2.In a mixing bowl, whisk the egg yolks, caster sugar and salt together until the sugar has dissolved.
3.Gently heat the milk and vanilla essence in a heavy-based saucepan and stir to combine.
4.Gradually whisk the milk into the egg yolk mixture, stirring continuously.
5.Follow by stirring in the orange zest.
6.Divide the sliced oranges among six ramekins and pour the egg yolk mixture on top.
7.Arrange the ramekins in a baking dish filled with hot water, making sure the water comes halfway up the sides of the ramekins.
8.Bake in the oven for 20–25 minutes or until the custards have set.
9.Meanwhile, melt the granulated sugar in a heavy-based saucepan over medium heat until it caramelises.
10.Once the caramel has turned a rich amber colour, stir in the hot water until the sugar has dissolved.
11.Spoon the caramel on top of the custards and serve immediately.
