2/3 cup coarse fresh breadcrumb ( from two slices of firm white bread )
1 tablespoon unsalted butter , melted
1 tablespoon olive oil

Instructions

1.Preheat the oven to 375°F.
2.In a medium saucepan, cook the onion in the butter until soft and translucent.
3.Add the flour and whisk until smooth. Cook for 1-2 minutes, or until the mixture is lightly browned.
4.Slowly add the milk and heavy cream, whisking constantly to prevent lumps from forming.
5.Add the Boursin cheese and stir until melted.
6.Add the spinach, Parmesan cheese, lemon zest, salt, white pepper, cayenne, and nutmeg. Stir until well combined.
7.Transfer the mixture to a 9x9 inch baking dish.
