Bourride Sètoise is a classic fish soup from the Provence region of France. It is made with a variety of fish and seafood, but traditionally includes monkfish, which has a firm (yet delicate) texture that holds up well in soup. The soup has a beautiful golden color, which comes from the saffron used in the soup. Aïoli, a garlicky mayonnaise, is often served on top of the soup as a garnish, adding another layer of flavor to this already delicious dish. Whether enjoyed as a main course or an appetizer, Bourride Sètoise is a true feast for the senses.

Instructions

1.Cut the fish into chunks and set aside.

7.Meanwhile, whisk together the egg yolks in a bowl.
8.Gradually add in 1-2 ladles of the hot soup mixture, whisking constantly to temper the yolks.
