1 package cream cheese
1/2 lb feta cheese
2 cups large curd cottage cheese
3 egg yolks
2 tablespoons minced parsley
1 cup butter or 1 cup margarine , melted
24 sheets phyllo dough ( about 2/3 of a 1 lb pkg )

Instructions

1.Preheat oven to 350°F.
2.In a large mixing bowl, combine cream cheese, feta cheese, cottage cheese, egg yolks, and minced parsley. Mix well.
3.Melt butter or margarine in a separate bowl.
4.Lay out one sheet of phyllo dough and brush with melted butter or margarine. Add the next sheet of phyllo dough and brush with melted butter or margarine. Repeat this process until you have used half of the phyllo sheets.
5.Cut the phyllo stack into 6 strips, each strip about 2 1/2 inches wide.
6.Place a small amount of cheese filling at the end of each strip, folding the dough over the filling to form a diamond shape. Continue to fold the dough over the filling until you reach the end of the strip.
7.Brush each diamond shape with the remaining melted butter or margarine. Place the cheese-filled diamonds on a baking sheet.
8.Bake in the preheated oven for 20-25 minutes or until the pastry is golden-brown.
