Ingredients

1 1/4 cups sugar
3/4 cup water
1 tablespoon fresh lemon juice
1 tablespoon honey ( preferably , Greek Thyme )
3 cinnamon sticks
3 whole cloves
3 cups ground walnuts
1 teaspoon cinnamon
1/4 teaspoon ground cloves
2 egg whites , room temperature , beaten to consistency of mayonnaise
1 lb phyllo pastry
1 cup butter , melted
icing sugar

Instructions

1.Preheat the oven to 350°F (175 °C).
2.In a medium saucepan, bring the sugar, water, lemon juice, honey, cinnamon sticks, and cloves to a boil over high heat. Reduce the heat to low and simmer for 5 minutes, stirring frequently.
3.Remove the pan from the heat and let it cool.
4.In a medium bowl, combine the ground walnuts, cinnamon, and ground cloves.
5.Add the beaten egg whites to the nut mixture and mix well.
6.Unroll the phyllo dough and place a sheet of it on a greased baking sheet. Brush the sheet with melted butter.
7.Repeat until there are 4 sheets on top of one another.
8.Sprinkle the walnut mixture evenly over the top phyllo sheet.
9.Roll up tightly like a cigar.
10.Brush top with melted butter.
11.Repeat until all of the walnut mixture is gone or all phyllo sheets are used.
12.Brush the tops with melted butter and bake for about 25-30 minutes or until golden brown.
13.Cut the bourekakia into small bite-size pieces while they are still warm.
14.Sprinkle with icing sugar and serve.
