2 cups long grain rice
6 small tomatoes , minced
1/2 cup olive oil
1 onion , chopped
2 cloves garlic , chopped
4 cups water
salt and pepper
1/3 bunch parsley , chopped
1/2 teaspoon sugar
Bourani Pilaf is a traditional Afghan recipe that has been enjoyed for centuries. It's often served at gatherings, celebrations, and family dinners. Instructions

1.Rinse the rice several times until the water runs clear. Soak for at least 30 minutes.
2.In a deep pot, sauté onions and garlic with olive oil until golden brown. Add the tomatoes and cook for another 5 minutes
3.Add the soaked rice, salt, pepper, sugar, and water. Bring it to a boil, reduce the heat and let the rice simmer.
4.When the water has evaporated, make holes in the rice, and add parsley and an additional drizzle of olive oil. Cover the pot and cook for an additional 10 minutes on low. Fluff the rice with a fork before serving.
