Instructions

1.Preheat oven to 180C / 160C fan.
2.Grease an oven-safe dish with butter.

5.Dot the diced butter over the top.
6.Pour the vegetable stock over the potatoes and onion, ensuring an even distribution.
7.Sprinkle with chopped parsley and dried chili flakes if using.
8.Season with salt and pepper to taste.
9.Cover the dish with foil and bake in the preheated oven for 50 minutes.
10.Remove the foil and bake for an additional 20-25 minutes, or until the potatoes are golden brown and tender.
