Instructions

1.Preheat the oven to 350°F.
2.In a small saucepan, combine the peeled garlic and canola oil and bring to a simmer over medium heat.
3.Once the oil is simmering, transfer the pan to the oven and bake until the garlic is soft and golden brown, about 40 minutes.
4.While the garlic is cooking, rinse the spinach and remove any thick stems.
5.Melt the butter in a large sauté pan over medium heat.
6.Add the shallot and cook until softened, about 4 minutes.
