Ingredients

1/2 cup durum flour
1/2 cup flour
1/4 cup water
1/8 cup warm water
1/2 teaspoon instant yeast
3/4 teaspoon salt
1/4 teaspoon caster sugar
1 teaspoon olive oil
150 g assorted mushrooms
3 shallots
1 garlic clove
1/2 tablespoon olive oil
1/2 tablespoon butter
1 tablespoon sage leaf , finely chopped
1 tablespoon parsley , finely chopped
1/2 cup white wine
1/2 cup vegetable broth
salt and black pepper
2 Italian sausages
1 teaspoon fennel seed
1/2 tablespoon olive oil
100 g button mushrooms
1/4 cup mozzarella cheese , grated
1 teaspoon parsley , for garnish
Boscaiola pizza is a classic and straightforward pizza recipe hailing from Italy. Instructions

1.Combine the two flours and salt in a large bowl and stir to combine
2.In a separate bowl combine the yeast and sugar with 1/8 cup of warm water, whisk briskly and let sit for about five minutes until the mixture is frothy.
3.Add the yeast mixture to the flour mixture along with the 1/4 cup of cool water and the olive oil. Stir until the ingredients come together, then turn out onto a lightly floured surface and knead for about five minutes until the dough is smooth and elastic. Shape dough into a ball, lightly oil, and let it rest for about an hour at room temperature.
4.Heat a skillet over medium-high heat. Add olive oil and sausage, stirring occasionally, until well browned.
5.Remove sausage from the skillet and add the button mushrooms in the same skillet, stirring occasionally for about 5 minutes. Put in sage leaf, wine, and broth, and stir. Bring to a boil, then lower the heat and let it simmer until the sauce reduces by a third.
6.Preheat the oven to 450 degrees F (230 degrees C).
7.Roll the rested dough out on a lightly floured surface until it's about 14 inch in diameter, spread the sauce over the surface, leaving a 1/2-inch border, top with grated mozzarella cheese, and sausage. Add mushrooms on top. Season as per taste with salt and black pepper
8.transfer to a baking sheet and bake for fifteen minutes, or until the crust is golden brown and the cheese is bubbling. Freshly garnish with parsley for an authentic aroma and flavour.
