Ingredients

4 cups cabbage
3 cups water
3 cups chicken broth
3 -4 medium potatoes
3 chicken bouillon cubes
1 -2 big carrot
1/2 medium onion ( yellow )
2 large fresh beets
1 can Italian-style diced tomatoes , drained
2 garlic cloves
fresh dill ( optional )
sour cream ( optional )
Borsh, also known as borscht, is a hearty soup traditionally from Eastern Europe, especially Russia, Ukraine, and Poland. It is a versatile soup that combines various vegetables such as beets, cabbage, carrots, and potatoes, along with meat (usually beef or pork), chicken, or vegetarian options. Borsh is considered a national dish of Ukraine, and variations of it can be found throughout the region. It is popular in the winter months, as the warmth of the soup is comforting and satisfying.

Instructions

1.Peel the beets and cut into thin strips.
2.In a large pot, add water, chicken broth, chicken bouillon cubes, and beets. Bring to a boil, then reduce heat and simmer for 15 minutes.
3.Peel the potatoes and cut them into small cubes. Add them to the pot and simmer for another 15 minutes.
4.Thinly slice the onion, dice the carrot, and add them to the pot. Simmer for 15 minutes.
5.Add the drained tomatoes, cabbage, and minced garlic. Simmer for about 10-15 minutes, or until the vegetables are tender.
6.Serve hot with a dollop of sour cream and some fresh dill (optional).
