Borracho Chicken, also known as drunken chicken, is a popular beer can chicken recipe with a twist. Instead of just using beer, this recipe adds diced onion, garlic, and jalapeno juice to the mix, infusing the chicken with intense flavor. The beer can method keeps the chicken juicy, while grilling it gives it a smoky taste and crispy skin. This recipe is perfect for a weekend barbecue with friends and family.

Instructions

1.Preheat the grill to medium heat.
2.In a small bowl, combine diced onion, garlic, salt, pepper, and jalapeno juice or beer.
3.Place the beer can on a solid surface and then slide the chicken over the can until the can is inside the chicken's cavity.
4.Brush the chicken with the onion mixture, covering it entirely.
5.Place the chicken on the grill, standing on the beer can, with the legs pointing towards the back of the grill.
6.Cook for around 1 hour, or until the internal temperature of the chicken reaches 165 degrees F.
7.Carefully remove the chicken from the grill, allowing it to rest for a few minutes before serving.

PROS

Borracho Chicken has a unique flavor profile due to the combination of onion, garlic, and jalapeno juice.
Cooking the chicken on the grill provides a smoky taste and crispy skin.

CONS

This recipe requires a grill to cook the chicken properly, so it may not be suitable for those who don’t have access to one.

The beer can method can be a bit tricky to set up, and it’s crucial to ensure that the chicken is stable while on the grill.

HEALTH & BENEFITS

Chicken is a good source of protein and other essential nutrients like niacin and vitamin B6. However, this recipe’s high salt content makes it less healthy, especially for those with high blood pressure.
Jalapeno juice can aid in digestion and metabolism, but it should be consumed in moderation due to its high sodium content.
