Ingredients

1 lb dried pinto bean
3 quarts water
12 ounces dark beer ( Mexican )
3 garlic cloves , minced
1/4 teaspoon kosher salt
1 teaspoon onion powder
1 teaspoon chili powder
3/4 teaspoon cumin
3/4 teaspoon Mexican oregano
3 -6 jalapeno peppers , seeded and minced
1 lb bacon , cut into 1-inch pieces and fried crispy
1 medium onion , chopped
3 roma tomatoes , chopped
1 cup cilantro , chopped
Borracho Beans is a classic Tex-Mex dish that translates to 'drunken beans' in English. These hearty pinto beans are simmered in dark beer, garlic, chili powder, and a host of other flavorful spices until they are fully cooked and tender. The addition of sauteed onion and roma tomatoes and crispy bacon pieces adds even more depth of flavor to this delicious dish. Instructions

1.Rinse the dried pinto beans and remove any debris or bad beans.
2.Add the beans to a large pot with 3 quarts of water and let them soak overnight.
3.Drain the water and add fresh water to the pot, along with the dark beer, minced garlic, kosher salt, onion powder, chili powder, cumin, Mexican oregano, and minced jalapeno peppers.
4.Bring the beans to a boil over high heat, then reduce the heat to medium-low and simmer for 2-3 hours, or until the beans are tender and fully cooked.
5.While the beans are cooking, fry the bacon pieces in a separate pan until crispy. Remove the bacon from the pan and sautee the chopped onion and roma tomatoes in the bacon fat for a few minutes.
6.When the beans are fully cooked, stir in the crispy bacon, sauteed onion and tomato mixture, and chopped cilantro.
7.Serve the Borracho Beans hot and enjoy!
