20 g fresh yeast

2 egg whites ( save the yolks for brushing the pasties ! )
1000 ml all-purpose flour
1 small onion

50 ml chopped fresh dill
50 ml plain yogurt
1/2 teaspoon salt

300 g ground beef

Börek is a classic Turkish dish that is widely appreciated all over the world. Instructions

1.Heat the milk until warm.
2.Add the sugar, salt and crumble the yeast – mix until the yeast dissolves.
3.Add the eggs, egg whites, melted butter and all-purpose flour.
4.Totally knead the dough until you get a very soft and flexible dough.
5.Cover the dough with a wet cloth and let it rest for 20 minutes.
6.Divide the rested dough into 5 equal pieces.
7.Preheat your oven to 180°C (350°F).
8.Beat the egg yolks and mix in the plain yogurt, salt, black pepper and set aside.
9.Heat oil in a frying pan on medium-high heat and sauté the onions until translucent in color.
10.Add the minced meat, parsley, garlic, salt, black pepper, sugar, chili paste, paprika, lemon juice, and continue cooking until the meat is fully cooked.
11.Crumble the feta cheese, mix in the chopped fresh herbs, and set aside.
12.Roll the dough pieces thin with a rolling pin on a floured surface.
13.Brush the dough pieces with the egg yolk mixture.
14.Place a spoonful of the minced meat mixture onto the top end of the dough.
15.One by one, roll the dough pieces over the minced mixture.
16.Give them a spiral shape and tuck in the ends.
17.Brush the pasties with the egg yolks and plain yogurt mixture again.
18.Put them in the oven (upper rack) for 30-35 minutes until the pasties are golden brown in color.
19.Let them cool down for 5 minutes and serve warm.
