Ingredients

3/4 lb ground lamb ( I used beef and pork mix )
3/4 lb sheep 's milk cheese ( I used feta crumbled )
1 garlic clove , minced
1/4 cup parsley , chopped
1 teaspoon thyme
pepper
8 sheets phyllo dough
1 egg
2 tablespoons water
1/4 cup olive oil ( for frying )
Borek is a popular pastry in Turkey and neighboring countries, often enjoyed as an appetizer or snack. It's made with layers of phyllo dough and filled with a savory mixture of ground meat and crumbled cheese. The dish can be shaped into a variety of shapes including triangular rolls, cigar-shapes, or in mini sized portions, and can be both baked or fried depending on the preference. Borek is typically served with a side of yogurt or tomato sauce to balance its flavors.

Instructions

1.Preheat oven to 350° F. Cook the ground meat in a pan until browned. Season with garlic, parsley, thyme, and pepper.
2.Add the crumbled sheep's milk cheese (or feta cheese) into the pan and mix well. Set aside.
3.In a small bowl, whisk together egg and water to make an egg wash.
4.Take one sheet of phyllo dough and brush it with olive oil.
5.Place another layer of the phyllo dough on top, brush with olive oil again.
6.Add a spoonful of the meat and cheese filling in one corner of the prepared phyllo dough.
7.Make a small triangle by folding the dough over the filling diagonally, and keep folding the phyllo dough until the filling is enclosed in a neat triangular shape.
8.Place the borek on a baking sheet lined with parchment paper. Brush the top of the borek with the egg wash and bake for 15-20 minutes, or until golden brown.
