3 cups vegetable stock or 3 cups water
1/2 lb green beans , trimmed and sliced into 1 inch lengths
fresh ground pepper
1/2 bunch cilantro , chopped
1/2 bunch parsley , chopped
1 bunch scallion , minced
aged cheddar cheese or parmesan cheese

Instructions

1.In a pot, heat olive oil then sauté onion and garlic.
2.Add red chili flakes, chili powder, paprika, oregano, salt, both bell peppers, and tomatoes.
3.Stir in arborio rice, add vegetable stock or water then continue cooking for 20 minutes in low-medium heat.
4.Add green beans and black pepper then simmer for a few minutes until the rice and green beans are cooked.
5.Garnish with cilantro, parsley, scallions, and cheese. Serve hot.
