Instructions

1.In a small bowl, combine 1/2 teaspoon active dry yeast and 1/4 cup warm water. Let stand for 10 minutes.
2.In a large mixing bowl, combine 1/2 cup all-purpose flour, 1 teaspoon active dry yeast, and 1 1/2 cups warm water. Mix together until smooth.
3.Add the yeast and water mixture from step 1 to the mixing bowl and stir well.
4.In another mixing bowl, combine 3 cups all-purpose flour, 1 cup rye flour, and 2 teaspoons salt. Mix well, then add to the large mixing bowl and stir.
5.Cover the mixing bowl with a damp towel and leave in a warm place for 18-24 hours.
6.Preheat your oven to 475°F. Place a baking dish filled with water on the bottom rack of your oven.
7.Flour your work surface, then transfer the dough from the mixing bowl and place it on the work surface.
8.Shape the dough into a round or oval loaf.
9.Place the loaf on a baking sheet or in a bowl and let rest for 30-45 minutes.
10.Use a serrated knife to make a few slashes across the top of the loaf.
11.Bake for 25-30 minutes.
12.Remove from oven and let cool for 10-15 minutes before slicing and serving.
