Ingredients

6 cups borage leaves ( and flowers )
1 cucumber , juiced pulp discarded
2 tablespoons lemons
1 package dry pectin
5 cups sugar

Instructions

1.Rinse the borage leaves and flowers well and place in a large stockpot with 7 cups of water.
2.Bring the pot to a boil and then reduce the heat and simmer the borage for 20-25 minutes. Stir occasionally.
3.Strain the borage through a fine mesh sieve (or cheesecloth if you have it) into a clean pot.
4.Add in the cucumber juice and lemon juice to the borage tea.
5.Whisk in the dry pectin powder slowly and bring the mixture to a rolling boil.
6.Add in the sugar and continue to boil the mixture until the sugar has dissolved and the mixture has thickened into a jelly.
7.Pour the jelly into sterilized jars and refrigerate until chilled and set.
