Bopis is a spicy Filipino dish made from pork offal, typically liver and lungs, but can also include pork heart, like in this recipe. It is considered a delicacy in the Philippines and is commonly served as a savory appetizer or as a main dish with rice. While it may not be for everyone, those who enjoy offal meats will find this dish rich, flavorful, and deeply satisfying.

Instructions

1.Prepare the pork liver, lungs, and heart by washing and drying them with paper towels. Cut the liver, lungs, and heart into small bite-size pieces.
2.In a pot with a lid, combine the distilled white vinegar, water, bay leaves, salt, and pepper. Add the pork liver, lungs, and heart to the pot and bring to a boil.
3.Cover the pot with the lid and let the mixture simmer over low heat for 30 minutes to an hour or until the liver, lungs, and heart are tender.
4.In a separate pan, heat the olive oil over medium-high heat. Add the onions and garlic, and sauté until the onions are translucent. Add the tomatoes and sauté for a few more minutes.
5.Add the pork liver, lungs, and heart, along with the cooking liquid, to the pan with the onions, garlic, and tomatoes. Stir everything together and sauté for an additional 10-15 minutes or until the liquid has been absorbed and the bopis is slightly crispy on the outside.
