1 1/2 cups warm water
4 - 4 1/2 cups unbleached all-purpose flour
2 teaspoons salt
1 cup ice cold water ( in spray bottle )
1/4 cup cornmeal ( or parchment paper )

Instructions

1.Dissolve yeast and sugar in warm water in a large mixing bowl and let it sit for 5 minutes until it becomes frothy.
2.Add flour and salt gradually, and stir until the dough comes together to form a ball.
3.Knead the dough for 10 minutes and allow it to rest for 10 more minutes in a covered bowl.
4.Create 8-12 individual ball shapes, place them on a baking sheet, and allow them to rest for an additional 20 minutes.
5.Preheat your oven to 475 degrees Fahrenheit.
6.Use a spray bottle to sprinkle each ball with ice-cold water, dust them with cornmeal, and score them 3 times diagonally.
7.Bake for 20-25 minutes or until golden brown.
