3 cups 2 % low-fat milk , scalded
1/2 cup butter ( margarine fine too )
1 1/2 cups granulated sugar
2 eggs
1 1/2 teaspoons salt
10 -11 cups flour ( do n't make dough too stiff )
1 lb pitted prunes
sugar
1 teaspoon vanilla
extract
1/2 teaspoon cinnamon
1 lb apricot
sugar , to taste
16 ounces cottage cheese
1 egg yolk
1/2 teaspoon lemon juice
1 dash nutmeg
4 tablespoons flour
1/2 cup raisins
1 teaspoon flour
3/4 cup granulated sugar
2 lbs poppy seed filling ( from a bakery )

Bohemian Kolaches with Four Fillings are a traditional pastry often found in Czech and Slovakian cuisines. Instructions

1.Dissolve the yeast in warm water and add 3 tablespoons of sugar. Let the mixture rest for 5 minutes until it is frothy.
2.Mix the scalded milk, butter, sugar, eggs, and salt in a large bowl.
3.Mix in the yeast mixture and beat in the flour one cup at a time. The dough should be of a sticky consistency.
4.Knead the dough on a floured surface for 5 minutes until it becomes smooth.
5.Put the dough in a buttered bowl, cover it with a damp cloth and let it rise, in a warm place, until it doubles for up to 1 hour.
6.Make the fillings by mixing 1 lb pitted prunes, sugar, vanilla extract, and cinnamon in a bowl. In another bowl, mix 1 lb apricot, sugar to taste, and vanilla extract. In a third bowl, combine 16 ounces of cottage cheese, 1 egg yolk, 1/2 teaspoon of lemon juice, dash of nutmeg, and 4 tablespoons of flour. In the fourth bowl, mix 1/2 cup of raisins, 1 teaspoon of flour, and 3/4 cup of granulated sugar. Finally, mix 2 lbs poppy seed filling (from a bakery) with 1 egg yolk and 1/4 cup of sugar.
7.Cut the dough into small pieces, form them into balls and flatten them to 1/4 inch thin disks.
8.Put 1 tablespoon of your desired filling in the center of each disk and press the edges together to make a ball.
9.Place the rounds, pinched side down, on a greased cookie sheet and let them rise for 30-40 minutes.
10.To bake, brush the risen kolaches with cream and bake them in a preheated oven at 375°F for 12-15 minutes or until golden brown. Cool them on wire racks and enjoy!
