Ingredients

1 teaspoon coriander seed
1 teaspoon fresh turmeric
1 1/4 teaspoons fresh ginger
3 shallots
1 garlic clove
1 -2 tablespoon tamarind pulp
5 red chilies
5 hot red chili peppers
1/2 fresh coconut , scraped
3 -4 medium ridge gourd or 4 -6 courgettes
2 tablespoons oil ( for frying )

Boh Pik Dipemp is a traditional Indonesian dish that originates from the Aceh region of Sumatra. Instructions

1.Soak the tamarind pulp in 1/2 cup of warm water for 15 minutes, then strain.
2.Grind the coriander seeds, fresh turmeric, fresh ginger, shallots, garlic, tamarind pulp, red chilies and hot red chili peppers in a mortar and pestle or blender to form a paste.
3.Cut the ridge gourd or courgettes into 3-4 cm thick pieces.
4.Heat the oil in a wok or frying pan on medium heat. Add the spice paste and fry until fragrant, for approximately 5 minutes.
5.Add the scraped fresh coconut, salt and 1 sliced shallot and fry for another 2 minutes.
6.Add the ridge gourd or courgette pieces and fry until cooked, stirring occasionally for 8-10 minutes.
7.Serve hot with rice or as a side dish.
