3 lbs stewing beef , in 1 '' cubes

Instructions

1.Melt bacon fat in a large, heavy-bottomed kettle over medium heat.

5.Add the beef cubes; season with salt and pepper. Sauté until browned, about 10-12 minutes.

7.Cover and simmer until the meat is tender, about 2 to 2 1/2 hours, stirring occasionally. If necessary, add more water to the pot in small amounts to keep the meat covered and the stew from getting too thick.
8.Serve goulash with a dollop of sour cream on top.
