Ingredients

5 lbs prime beef , cubed & trimmed of fat
1 lb shallot , peeled
4 -6 garlic cloves , peeled & chopped finely
1 bunch fresh thyme
2 -4 bay leaves
750 ml Burgundy wine
1 -2 tablespoon olive oil
1 lb lardons , Smoked Bacon pieces
1/2 ounce dried cepes , soaked for 1 hr
6 -8 pieces dried orange peel , see method
1 tablespoon soft brown sugar
sea salt
fresh ground black pepper
1 -2 tablespoon cornflour , for thickening
2 tablespoons cognac
2 -4 sun-dried tomatoes , drained & chopped finely ( optional )
1 can chopped tomatoes ( optional )
Boeuf En Daube, translated as beef in wine, is a classical French dish that originated in the Burgundy region. It is a stew made with beef, vegetables, and red wine. It is seasoned with herbs and spices, such as thyme, bay leaves, and orange peel, and is often cooked for several hours to infuse the flavors together. The dish can be traced as far back as the 14th century, and has become a staple in French cooking. Instructions

1.In a large skillet, heat olive oil over medium-high heat. Add the beef in batches and cook for 3 minutes or until browned. Remove from the skillet.
2.Add the lardons, shallots, and garlic to the skillet. Cook for 5-7 minutes or until the vegetables are tender. Drain the vegetables and add them to the crockpot.
3.Add the thyme, bay leaves, wine, dried cepes, orange peel, sugar, salt, and pepper to the crockpot. Stir to combine.
4.Cover the crockpot and cook on low heat for 8-10 hours, or on high heat for 4-5 hours.
5.In a small saucepan, heat the cognac until warm. Carefully ignite the cognac with a long match. When the flames have died down, add the cognac to the crockpot.
6.If desired, add sun-dried tomatoes and canned chopped tomatoes to the crockpot.
7.In a small bowl, whisk together cornflour and 2 tablespoons of water. Stir the mixture into the crockpot. Cook for another 30 minutes, or until the sauce thickens.

PROS

Boeuf En Daube is packed with flavor and can be served with mashed potatoes, rice, or bread.
It can be easily made in a crockpot and can be cooked in advance.
Leftovers can be frozen and reheated.

CONS
