Ingredients

2 lbs stewing beef , cut into 6 large chunks
2 tablespoons plain flour
2 tablespoons vegetable oil
5 ounces lardons or 5 ounces cubed smoked bacon
10 button onions or 10 shallots , peeled
2 garlic cloves , crushed flat
1 bay leaf
1 bunch parsley , stalks only ( leaves reserved )
1 sprig thyme
1 sprig rosemary
3 cloves
10 peppercorns , crushed
2 cups red wine
1 tablespoon tomato paste
1 teaspoon sugar
1 teaspoon salt
10 chestnut mushrooms
fresh parsley leaves , chopped , to garnish
7 ounces stale baguette , crust included ( or other bread )
chopped parsley
1 cup milk
1 pinch nutmeg
salt and pepper
1 egg
1 tablespoon plain flour
butter , for frying

Instructions

1.Preheat the oven to 325°F / 165°C.
2.Coat your beef in the flour.
3.In a large casserole or dutch oven, heat the oil on a medium-high heat.
4.Add the beef and cook for 10-15 minutes until browned on all sides. Remove and set aside.
5.Fry the lardons or bacon in the same pan until crisp.
6.Add the onions and garlic and cook for a few minutes until soft.
7.Add the bay leaf, parsley stalks, thyme, rosemary, cloves, peppercorns, wine, tomato paste, sugar, salt, and the cooked beef.
8.Bring the mixture to a boil then cover and cook in the oven for 2-3 hours.
9.Remove from the oven and add in the mushrooms, then return the dish to the oven for a further 10-15 minutes.
10.While the stew is cooking, make the dumplings by tearing the stale baguette into small pieces and mixing with chopped parsley, milk, nutmeg, salt, pepper, egg, and flour in a bowl.
11.Form the mixture into small balls.
12.In a frying pan, heat some butter over a medium heat and fry the dumplings until golden brown.
13.Serve the stew topped with the dumplings and chopped parsley.
