1 1/2 3 lbs bone-in beef short ribs or 1 1/2 lbs beef stew meat
2 tablespoons olive oil
1 teaspoon olive oil
6 carrots , peeled and cut into thirds
2 cups white pearl onions , thawed from frozen
2 garlic cloves , smashed
1 bunch chervil , leaves chopped and stems reserved
3 juniper berries , crushed ( optional )
2 bay leaves
1/2 cup dry red wine
3 cups beef stock
6 carrots , peeled and cut into 1/2-inch thick coins
2 tablespoons butter , room temperature
2 tablespoons flour
Boeuf Aux Carottes, or beef stewed with carrots, is a classic French dish that is perfect for a cold winter night. The dish consists of bone-in beef short ribs or beef stew meat, carrots, pearl onions, garlic, chervil, juniper berries, bay leaves, red wine, beef stock, butter, and flour. Instructions

1.Preheat the oven to 325 degrees Fahrenheit.
2.Season the beef with salt and pepper.
3.Heat 2 tablespoons of olive oil in a heavy-bottomed Dutch oven over medium-high heat.
4.Working in batches, brown the beef on all sides, about 5-7 minutes per batch. Set the beef aside on a plate when done.
5.Add 1 teaspoon of olive oil to the Dutch oven and sauté the carrots, pearl onions, and smashed garlic for 5 minutes.
6.Add the chervil stems, juniper berries, and bay leaves. Cook for another 2 minutes.
7.Add the dry red wine and beef stock to the Dutch oven. Bring to a boil.
8.Return the beef to the Dutch oven and add the carrot coins.
9.Cover the Dutch oven with a tight-fitting lid and bake in the oven for 2.5-3 hours or until the beef is tender.
10.In a small bowl, mix together butter and flour until completely combined. Add this mixture to the Dutch oven and stir until the sauce thickens slightly. Discard the chervil stems and bay leaves before serving.
