Ingredients

26 ounces beef , suitable for braising
1 onion
2 cloves
1 sprig thyme
1 sprig sage
1 bay leaf
2 celery ribs
2 slices orange rind
3 cups red wine
3 tablespoons red wine vinegar
4 garlic cloves , peeled and quartered
5 ounces fresh pork rinds or 5 ounces thick-cut bacon , trimmed of fat
3 tablespoons olive oil
8 ounces medium carrots , peeled and cut into 1/4-inch slices
1/4 teaspoon salt , to taste
1/8 teaspoon fresh ground pepper ( to taste )
freshly grated nutmeg , to taste , about four pinches
7 ounces bacon
Boeuf a La Gordienne is a classic dish from the south of France, also known as Provencal Braised Beef. It's typically eaten during the colder months and is perfect for a cozy dinner. The dish is made by braising beef in a rich, savory sauce infused with red wine, bacon, and herbs. Instructions

1.Preheat your oven to 350°F.
2.Cut the onion into quarters and stick the two cloves into one of the quarters. Then add this onion quarter, along with the sage, thyme, bay leaf, celery ribs, orange rind, red wine, red wine vinegar, garlic, and 4 oz of the sliced bacon, to a saucepan and bring it all to a simmer.
3.After about 5 minutes, remove from heat and set it aside.
4.Cut the beef into even pieces and season them with salt, pepper, and nutmeg. Then, in a Dutch oven or another oven-proof pot, heat the olive oil over medium-high heat and add the beef. Cook the meat until it is browned on both sides. Remove the beef from the pot and add in the remaining bacon to cook in the leftover juices.
5.Once the bacon is crispy, remove it from the pot and discard all but 2 tbsp of the bacon fat. Add the sliced carrots to the pot and sauté for 2-3 minutes. Add in the beef, the wine mixture, and the pork rinds or bacon.
6.Bring the mixture to a simmer and then cover the pot with foil and a tight-fitting lid.
7.Place the pot in the oven and let it braise for about 2-2.5 hours, or until the beef is tender.
8.Remove from the oven and adjust the seasoning as necessary.
9.Serve hot and enjoy!
