Instructions

1.Preheat oven to 350°F.
2.In a mixing bowl, combine crushed corn flakes, chili powder, fajita seasoning, red, yellow and orange bell peppers, mushrooms, red onion, 1/2 cup of the shredded cheddar cheese and salsa.
3.Divide mixture onto each chicken breast and roll up, securing with toothpicks.
4.Dip each roll into a small dish of melted butter, then into a dish containing remaining crushed corn flakes.
5.Place the rolls into a greased baking dish and bake in the preheated oven for 30 minutes or until chicken is cooked through.
6.Sprinkle with remaining cheese and bake for an additional 5 minutes until cheese is melted.
