Bobota (Islander Corn Bread) is a traditional Greek bread that's perfect for breakfast or dessert. This recipe is a modern twist on the classic bread, using orange juice, honey, and currants to give it extra sweetness and flavor. The bread is moist and tender, with a subtle crunch from the cornmeal. It's traditionally served with a cinnamon syrup, which gives it a sticky-sweet glaze. This recipe is easy to make and can be enjoyed by the whole family, no matter their age.

Instructions

1.Preheat the oven to 350°F.
2.In a large mixing bowl, combine the cornmeal, sifted flour, baking powder, baking soda, salt, and sugar.
3.Add in the honey, orange juice, warm water, warm vegetable oil, grated orange peel, and currants. Mix well.
4.Pour the mixture into a lightly greased 8-inch square baking dish.
5.Bake the bread at 350°F for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
