1 teaspoon ground black pepper
3 tablespoons soy sauce
1 tablespoon cooking oil
1 tablespoon apple cider vinegar
2 lbs chicken breasts , dice 1/2-inch thick
12 wooden skewers , soaked in water for 2 hours
1 1/2 lbs cucumbers
3/4 - 1 cup sour cream
3/4 - 1 cup mayonnaise
1/8 cup cider vinegar
1 tablespoon salt ( or less to taste )
1 pinch cayenne pepper
1 tablespoon Dijon mustard
1 tablespoon chopped garlic

Instructions

1.In a large mixing bowl, combine the onion, scallion, thyme leaves, salt, sugar, allspice, nutmeg, cinnamon, ground pepper, soy sauce, cooking oil, and apple cider vinegar.
2.Add the chicken pieces to the marinade and mix it well. Cover the bowl with cling film and let it marinate for 2 hours or up to 24 hours.
3.After marination, take the soaked wooden skewers and thread the chicken pieces onto the skewers.
4.Preheat the grill or grill pan and place the chicken skewers on the grill rack. Grill for 5-7 minutes on each side until cooked through.
5.Meanwhile, peel the cucumbers and cut them into bite-size pieces.
6.In a mixing bowl, combine the sour cream, mayonnaise, cider vinegar, salt, cayenne pepper, Dijon mustard, and chopped garlic.
7.Add the cucumber pieces to the mixing bowl and toss them with the dressing. Serve with the hot Jamaican Jerk Chicken Skewers.
